**NECTARINE PANCAKES**

Pancakes dont have to just be a treat day thing… these are so simple AND healthy that you can have them every day…!

In a food processer, simply whizz up the following:

+ 1 ripe banana
+ 2 eggs
+ 1/2 Cup  of any “Dry ingredient” eg Oat Flour (being just oats ground up), Buckwheat Flour or Vanilla Protein powder (or a mix of both – protein powder definitely thickens up the mix)
+ 1 Tspn Baking Powder
+ a Teaspoon of cinnamon.

That’s it!!

Then melt some coconut oil onto a small hot pan. Pour over your liquid. Let the underneath cook for a few minutes, THEN *trick for perfect pancakes*  move the pan below to the oven grill to finish off the top!

You can leave it open, with the handle out so it doesn’t get too hot, but with the pancakes being cooked on top to the perfect golden colour.

Often I throw on some blueberries on top before grilling so they melt on top of your tasty pancake mix for extra sweetness.

Once its ready, serve up on a plate. Drizzle with honey / nut butter / tasty nectarines / any fruit / coconut / chopped walnuts for eeeven more deliciousness!

I often make a whole batch and keep them in the fridge to warm up for an afternoon snack… give it a go!
