This is another “recipe” that barely deserves a recipe… you can really add whatever you have in your pantry to your tray, bake it up, and enjoy it for breakfast as a delicious & nutrient dense option!
Ingredients:
Water / 1/3 cup of honey
1/2 cup melted coconut oil
1/2 Cup of shaved Coconut
1/2 cup of sunflower seeds
1/2 cup of cashews / mixed nuts
1 cup of (soaked) buckwheat groats
Pinch of salt
Handful of dried fruit (I love dried strawberries but raisins / apricots and all options work well)
1 Tbs Ground Ginger
1 Tbs Ground Nutmeg
1 Tbs Ground Cinamon
Any flavours you like /have – cacao / pumpkin spice etc etc.
Method:
Preheat the oven the about 100’C. Mix together everything (except the dried fruit) in a bowl until everything is mixed and coated in some of the coconut oil.
You can use more honey if you want to make sort of “clusters” with the buckwheat.
Spread the granola mix onto trays lined with baby paper and then bake. Give it a shake every now and again, so it all gets golden and crunchy. Once cooled, transfer to a jar and mix in the dried fruit afterwards for sweetness. Sometimes i add raw rolled oats at this stage too. Keep in an airtight container and enjoy with greek yoghurt & berries! x
