These Chickpea Brownies were my most “Saved” recipe on Instagram this year…. So good to see so many of you keen to add in extra healthiness and not scared of different ingredients (+extra protein!) in your treats!
These are rich, decadent, gooey – AND so easy to make … try them!
In your food processor throw in:
+ 1 can of drained chickpeas
+ 1/2 cup plus a bit of peanut butter (ideally a good quality one with no Palm Oil)
+ 1.5 TBS melted coconut oil
+ 1/2 cup rice malt syrup
Whiz together, then add:
+ 1/2 Tspn baking powder
+ 1 big splosh vanilla essence
+ 1/3 cup Cocoa (maybe more if you like it rich)
+ 1/3 cup almond meal
+ 2/3 of a bar of Dark Chocolate (I used Lindt 70%) (chopped into chunks)
Whizz it up, then pour into baking tray lined with baking paper. Chop up the rest of the choc bar into big chunks and sprinkle more on top (or press some raspberries in as well even).
Bake @ 180’C for about 25mins. It’ll come out pretty “uncooked’ so you may think it needs more time, but once it has cooled it is perfect. It also hardens up in the fridge so keep it fairly gooey.
