Yesss… A Hot Spicy Laska Style Broth! You can either make your own paste, or cheat and buy a good, preservative-free made one. Then:
1️⃣ Poach your Chicken Thighs (ie boil in boiling stock then drain, and shred by ripping it all apart with a fork so it’s all flakey…) then put to one side. SO much tastier than usual meat in a curry.. worth a try.
2️⃣ In a big frying pan, softly fry 2 Red Onion & loads of Garlic. Add the Laksa paste and stir on low heat.
3️⃣ Add 2 cups of chicken stock/broth & a can of coconut milk and bring to heat (don’t let it boil).
4️⃣ Then chuck in whatever veg you have around – I used 3 pak Choi, 1 red pepper, 6 spring onions, & pack of beansprouts.
5️⃣ I also added some extras such as crispy tofu, a couple of prawns, some tinned bamboo shoots for crunch and fresh Chillies – but all to your taste and pantry! Finally, add your drained, cooked shredded chicken.
6️⃣ Let it all simmer for a few minutes until all piping hot.
7️⃣ Serve with fresh coriander, more chillies, Cauliflower / Coconut Rice…
