**GREEN PEA & POLENTA FRITTERS**

Green Peas are a fantastic source of Vitamin A, K + folate,  fibre and are packed with protein as well as iron for energy metabolism. They are loaded with antioxidants and anti-inflammatory nutrients, so mix them with  polenta (gluten-free/low fat/ fibre filled) and make these delicious little appetizers/breakfast bases!

To make 4 small:

INGREDIENTS:

  • 1 Cup of Frozen Peas
  • 2 Spring Onions
  • 1/2 a Fresh Chilli
  • 2 Tbpsn Ground Polenta
  • 1 Tbson Almond Flour
  • Salt, Pepper & Chilli Flakes to taste

METHOD:

As with all my recipes, this doesn’t have to be exact, so dont worry about measurements too much. Like things spicy? Make it a whole chilli. Extra Tasty? Add more spring onions. Dont like Peas? Use Sweetcorn!

First step, whizz up your peas, onions and chillies in a nutibullet / magimix. Next, stir in your flours (Polenta & Almond). The consistency should be soft but not too runny, like a very thick smoothie.

Heat up your frying pan with Olive Oil / Coconut Oil. Once piping hot, heap a few tablespoons of the mixture in to the middle of the pan and let them sizzle for a minute or two. Once one side is crispy, flip them over to cook the other side.

Serve up with poached eggs and tomato for breakfast! OR use  the left overs the next day as a savoury side and serve with a Teryaki Tuna Steak, side salad and a squeeze of lemon.  YUM.
