** PROTEIN PANCAKES **

Pancakes have always been one of my favourite breakfasts, and now even more so with my improved super-quick paleo recipe.
This recipe has only 6 ingredients and is my new go to because it’s so easy and fast, and doesn’t contain any of the processed pre-mix nasties.

The ingredient list for packaged pancake mix includes just so many sugars and ‘fake’ ingredients such as sodium aluminum phosphate, dextrose, hydrogenated soybean oil, corn syrup solids, enriched bleached flour, niacin, thiamin mononitrate, riboflavin, folic acid… etc. whereas mine simply has bananas, eggs, coconut flour, protein, and vanilla extract!

They’re just as fast, made from all real food ingredients—no gluten, grains, dairy, sugar, or processed food chemicals, perfect for post gym with the addition of vanilla / protein powder (but you can leave this out and just add a little more coconut flour if you prefer)

INGREDIENTS (Enough for 2):

2 Large Bananas
4 Eggs
2 tablespoons of Coconut Flour
2 tablespoons of Protein Powder (Chocolate / Vanilla / Mocha even nicer!)
2 tspns of Vanilla Extract
Coconut Oil for Frying
(Plus Maple Syrup / Honey / Fruit for decorating)

METHOD:

Simply add the bananas, eggs, coconut flour and vanilla extract to your food processor and whizz it up!  In a hot pan, add coconut oil (and keep adding as you make more batches)
Pour in circular amounts of your pancake mix, leaving for about a minute either side until lightly brown. Cook them all and stack them up.
Serve up with honey and a mix of fruit – Enjoy!

  1. WHOA! This is unacceptable. It looks too delicious! Your photography is lovely and this recipe looks like something I really need in my life ASAP. I’ve had coconut flour on hand for a while now, since I normally like to use it in some of my paleo-inspired recipes, and this got me out of my coconut flour rut. I bet this tasted absolutely amazing. Thanks for the inspiration and I look forward to seeing more recipes in the future 🙂
