These Avocado boats barely deserve a recipe as they are so simple! But they are SO delicious they are worth adding to your breakfast repertoire.
Simply halve the avocados (try and buy big ones if you can find them), and then carve out some of the flesh. Line the hole with Smoked Salmon, then crack an egg into it. Season well and bake for about 13 minutes, or until your yolks look how you like them!
Garnish with Chilli flakes and Dill, or Spring Onions and enjoy warm.
You can also skip the salmon if you don’t have any, and just serve with crispy bacon and tomatoes – equally delicious!
