Breakfast can be one of the hardest meals to stick to a healthy and nutritious diet, particularly when you’re in a rush to the office and don’t have time to create a full balanced meal before you head off… To avoid turning to those sugary breakfast cereals at your desk, try making your own homemade granola (see my recipe under “Breakfasts”) or making these gluten-free, sugar-free, paleo breakfast muffins which are perfect for breakfast on the go.
Ingredients (makes 8):
8 Eggs
1 pack of Smoked Salmon
1 finely chopped up Zucchini
1 finely Chopped Pepper
1 finely Chopped Red Onion
1 Handful of Spinach
Chopped Chillies and Paprika
Sea Salt and Pepper to season
Method:
Preheat the oven to 200ºC and grease your muffin tray
In a pan, add your zucchini, onions and peppers and slowly soften for a few minutes.
Once cooked, add to a bowl and add your beaten eggs, all the flavourings, as well as small pieces of smoked salmon and spinach. Pour the mixture into a muffin tin and pop in the oven for 6-10 minutes.
You can have them straight out of the oven for breakfast or heat them up if you want to have a healthy snack later on. The high protein content in eggs makes us feel fuller for longer and encourages you to eat less calories through the day.
