Aubergines are excellent at soaking up flavour, so all different zests and tastes can be added giving you an amazing little accompaniment to any main meal, or serve on their own with a Fig and Mozzarella Salad.
Method:
Slice up an Aubergine (or “Eggplant” if you like!) into thick 1.5cm ish slices, then on each one carefully splice crosses on the flesh to allow the Olive Oil to soak in.
Drizzle over Extra Virgin Olive Oil and a dash of Sesame Oil and light fry in a Griddle Pan.
Once soft, serve with a sprinkle of Sesame Seeds and Chopped up Fresh Basil.
Salt & Pepper to taste, and serve hot!
